Following the successful Introduction to Chocolate workshops -and the much needed confidence boosts that came with actually doing them - I am happy to announce that the Introduction to Chocolate Bonbons workshops are finally happening! In keeping with my desire for small, intimate workshops that allow for one-to-one teaching, these workshops are limited in space.
This Introduction to Chocolate Bonbons workshop is specifically designed to be a deep-dive for both new and experienced chocolatiers looking to explore the more technical and artistic side of chocolate production. Because this is a comprehensive, hands-on experience, we will be covering the following topics:
- The Science of Tempering: Practical methods for tempering chocolate and cocoa butter without requiring specialised equipment, understanding temperatures and their impact on your tempering process, and testing methods for getting that super-satisfying snap and glossy finish.
- Shell Design: Discover how to paint with coloured cocoa butters in order to create stunning, unique and professional-looking bonbon shells.
- Simple Yet Sophisticated Fillings: How to approach bonbons more like a dessert than a traditional chocolate - simple flavours, understanding layers and the importance of sequencing, taste testing. We will be working with Pâte de Fruit and Ganache infusions. Depending on time, we will also look at caramels…
A Few Small Details:
- Duration: Approximately 6 hours, 10am to 4/5pm. We will be taking a lunch break around 1pm and walking to Ali’s Lebanese Sandwiches down the road (workshop costs do not cover lunch, but the food isn’t expensive and tastes amazing).
- Cost: €120 per person (includes tea/coffee)
- Intimate Group: In order to ensure a more personalised experience, the group size will not exceed 3 people.
- Take-Home Treats: I don't want you to leave empty handed! You will of course take home all of your own handmade creations plus a general gift of my own personal artisanal chocolates and bars (valued up to €20).
