12 Chocolates (The Bridge)

Sometimes, the most important steps are the ones that bridge the gap. 

The box of 12 was born out of a practical necessity in our kitchen. We realised that the jump from our original Kaapstad box to our larger collections was too wide – there needed to be a perfect middle ground. But beyond the size, this box represents the evolution of my philosophy as a craft chocolate producer. 

In my goal to create complex, multi-layered desserts, I have noticed a profound irony within the chocolate industry: everything is structured, and there is a heavy pressure to keep things traditional, with little room for change. To me, the irony is that working with chocolate is, at its heart, experimental and chemistry. 

Whilst I have immense respect for classical traditions and will always try to honour them with a few bonbons leaning towards those roots, I do not want my chocolates to stay there. I am making desserts. I am styling these bonbons as desserts. I am playing with chemistry and experimenting with textures in order to take you on a journey of shifting flavour notes. They aren't one-dimensional; we don't add vanilla to 'improve' the flavour. We let the farm-direct cacao and high quality ingredients speak for themselves. 

This box is the bridge between the respect for where chocolate has been and the excitement of where we are taking it.
