16 Chocolates (Gerhardt)

This collection is named after Sarah Gerhardt, the first woman to surf Mavericks. She is a pioneer who stepped into a big-wave surf culture steeped in rigid structure and made it her own. She achieved what many said was impossible, and in doing so, she opened the door for everyone who followed. 

While I don't surf big waves, I have found connection with her spirit and mentality. In an industry that often feels bound by tradition and 'the way things have always been done,' I have chosen a different path. I am not interested in the one-dimension; I am interested in the experimental. I am interested in pushing the boundaries of the bite-sized dessert to see how far the flavours of a single chocolate bonbon can go. 

The Gerhardt collection is designed to be a shared experience. These 16 chocolates are meant to sit at the center of a table and start a conversation; they are a celebration of the pioneer spirit – a thank you to Sarah Gerhardt for the inspiration to move past the safety of the shore and pursue my own dreams.
