When I first began this adventure, I was at a crossroads. The covid pandemic had just started and everything was up in the air; I was out of a job, restaurants all over the kitchen were closed, and there was so much uncertainty. My wife gave me an ultimatum that changed everything: figure out what you want to do, or get a job you'll complain about as long as covid lasts. I chose the former, and figured it out. And in every sketch and every plan, a box of eight was always there. We named it Kaapstad (Cape Town).
Kaapstad was where I began to figure out who I was, so it felt like the right place to start this adventure too. It was the start of the journey that led me from a home kitchen into the professional studio that I work in today. But as the adventure grew, so did my responsiblity to the world around me.
Today, the Kaapstad box isn't just a collection of eight artisanal chocolate bonbons; it is a reflection of how far I have come. It represents our commitment to farm-direct cacao that respects the growers, and bio-degradable, plastic-free, UK-sourced packaging that respects the earth.
